baked mahi mahi with potatoes, rosemary and garlic

sometimes there's a good story to tell about a dish, and sometimes its just "i thought i should make dinner and there was some mahi mahi in the freezer, so i searched epicurious and found a recipe."
the recipe i found was Marcella Hazen's baked fish with potatoes, rosemary, and garlic.
it was simple, delicious, and comforting.

it would probably be just as good without the breadcrumbs, if you don't feel like buying any.

As one of the lucky who got to have this for dinner, I must comment that there IS a story- this was a great meal to come home and find cooking away in the kitchen. YUM!

I've never cooked mahi mahi before but this looks great. I think I always get caught up in the tuna, salmon, halibut mode and overlook it. I just might get it at my trip to whole foods tomorrow.

Looks yummy, I love that you can cook the potatoes and fish together in the same pan!

Hi Rita and Lola,

I'll bet you two are the most popular ones in your dorm! I think it's great that so many young women out there obviously enjoy cooking great food and show it through some really interesting food blogs. I've known what it's like to have a TINY kitchen and that makes what you're doing all the more impressive. You go, girls!

:)
