new york, new york + pesto pasta


hello again! we're here, in the city that never sleeps, sleeping in a tiny dorm room. observe the "kitchen", which is not, in fact, a separate room, just a stove and a fridge about 3 feet from my desk:
we now have many food stuffs, courtesy of trader joe's and whole foods, for about $20 total. we are happy. we are ready for the year.

today's recipe is more pasta, made back in the day when we still had a real kitchen, by rita. enjoy!
Pesto Pasta
serves 2
I can't remember the exact amounts, but here's what I did, roughly:
1)Cook about 1/2 cup spaghetti, linguine, or similar pasta.
2) While pasta is cooking, chop up some red onions and mushrooms. Heat about 1 tablespoon of olive oil in a small non-stick skillet. When it's hot, add the veggies and saute about 3 minutes, until soft.
3)Meanwhile, heat about 1 teaspoon butter in a small non-stick skillet. Add a handful of pine nuts and saute until lightly browned.
4) When pasta is done cooking, mix in the veggies, about 1/2 cup pesto sauce, and about 1/2 cup cooked chickpeas.
5) Separate the pasta into 2 bowls, then top each bowl with pine nuts, 2 basil leafs, and some grated Parmesan cheese.

Ooo... I love the chickpeas and pesto - what a great combination! Well, it will be interesting to see how you two rise to the challenge with this um... huge... set-up.

Ooh I love pesto pasta - its a family favourite round here :) I'll be interested to see more of that tiny kitchen: it will make baking and cooking even more of an adventure!

Pesto and I are on very good terms this year, I love the pasta dish. I am a Whole Foods/TJ's shopper as well! Shockingly enough, they are actually the cheaper supermarkets to go to in the city! My kitchen looks kind of like that as well...I guess it's the price we pay for living in such a great (but densely packed) city.

Like they say, size doesn't matter, it's how you use it. Right? Obviously this must apply to kitchens too. I've never had a big kitchen. Always galley kitchens, and I only recently upgraded to a place with a slightly bigger one. I wouldn't know what to do with acres of counterspace. I'd never sleep!

thanks everyone! definitely anything with pesto and pasta is amazing in my book. and i hope we will able to cook amazing stuff in our dorm room. we have always previously been lucky enough to have a big kitchen.
Joanna-yeah, i went to whole foods and tjs again today. it is cheaper if you know what items to buy there, but the lines are insanity!
